Instructions
Step 1
Prepare the pan and ingredients. Ensure the breadmaker pan and paddle are clean and fitted. Have all ingredients measured out. Use luke warm (30ish degree not too warm as it will overproof) and room-temperature egg.
Step 2
Add wet ingredients to the pan. Pour the water into the breadmaker pan. Add the egg, oil, and apple cider vinegar.
Step 3
Add dry ingredients (except yeast). On top of the liquid, add the gluten-free flour, psyllium powder, sugar, salt, and xanthan gum (if using). Gently level the surface of the dry ingredients.
Step 4
Add the yeast. Make a small shallow well in the centre of the dry ingredients (do not dig down into the liquid). Tip the 7 g yeast sachet into this well, keeping it dry and separate from the water for now.
Step 5
Set the program. Place the pan into the Kmart breadmaker and close the lid. Select the Rapid (or Quick) program, choose the 800 g loaf size, and set crust to Dark. Do not use the delay timer for this recipe.
Step 6
Start the cycle and let it mix. Start the Rapid program. Let the machine mix and knead. After the mixing phase stops (about 5–7 minutes in), open the lid and scrape down the sides of the pan with a silicone spatula. Check the dough consistency — it should look like thick cake batter that slowly levels out. If it’s too stiff, add 1–2 tsp water; if it’s too runny, note it for next time and reduce water slightly.
Step 7
20-minute rise check. About 20 minutes after the mixing phase begins, open the lid and look at the dough. It should be level or only gently domed, not pushing close to the lid. If it is already very high and domed, stop the program and switch to Bake Only for 50–60 minutes.
Step 8
Let the Rapid cycle bake. If the dough is rising moderately, close the lid and let the Rapid program continue through to baking. Avoid opening the lid during the bake phase so the loaf doesn’t collapse.
Step 9
Check doneness. When the cycle finishes, carefully remove the pan. Turn the loaf out onto a rack. Tap the bottom – it should sound hollow. If it feels very soft or underbaked, you can return it (without the pan) to a 160–170 °C oven for 5–10 minutes.
Step 10
Cool completely before slicing. Allow the loaf to cool fully on a wire rack before slicing. Gluten-free bread firms up as it cools; slicing too early can make it seem gummy even when it’s properly baked.
