Instructions

Step 1
Prepare the pan and ingredients. Ensure the breadmaker pan and paddle are clean and fitted. Have all ingredients measured out. Use luke warm (30ish degree not too warm as it will overproof) and room-temperature egg.
Step 2
Add wet ingredients to the pan. Pour the water into the breadmaker pan. Add the egg, oil, and apple cider vinegar.
Step 3
Add dry ingredients (except yeast). On top of the liquid, add the gluten-free flour, psyllium powder, sugar, salt, and xanthan gum (if using). Gently level the surface of the dry ingredients.
Step 4
Add the yeast. Make a small shallow well in the centre of the dry ingredients (do not dig down into the liquid). Tip the 7 g yeast sachet into this well, keeping it dry and separate from the water for now.
Step 5
Set the program. Place the pan into the Kmart breadmaker and close the lid. Select the Rapid (or Quick) program, choose the 800 g loaf size, and set crust to Dark. Do not use the delay timer for this recipe.
Step 6
Start the cycle and let it mix. Start the Rapid program. Let the machine mix and knead. After the mixing phase stops (about 5–7 minutes in), open the lid and scrape down the sides of the pan with a silicone spatula. Check the dough consistency — it should look like thick cake batter that slowly levels out. If it’s too stiff, add 1–2 tsp water; if it’s too runny, note it for next time and reduce water slightly.
Step 7
20-minute rise check. About 20 minutes after the mixing phase begins, open the lid and look at the dough. It should be level or only gently domed, not pushing close to the lid. If it is already very high and domed, stop the program and switch to Bake Only for 50–60 minutes.
Step 8
Let the Rapid cycle bake. If the dough is rising moderately, close the lid and let the Rapid program continue through to baking. Avoid opening the lid during the bake phase so the loaf doesn’t collapse.
Step 9
Check doneness. When the cycle finishes, carefully remove the pan. Turn the loaf out onto a rack. Tap the bottom – it should sound hollow. If it feels very soft or underbaked, you can return it (without the pan) to a 160–170 °C oven for 5–10 minutes.
Step 10
Cool completely before slicing. Allow the loaf to cool fully on a wire rack before slicing. Gluten-free bread firms up as it cools; slicing too early can make it seem gummy even when it’s properly baked.

*****Machine Settings***** Program: Rapid NOT GF Loaf size: 800 g Crust: Dark Delay timer: OFF Open lid at 20 minutes to check rise *****Australian spoon measures used***** 1 Australian tablespoon = 20 ml 1 teaspoon = 5 ml ****Flour Notes**** **White Wings (most stable – best starting point) Flour: 500 g White Wings GF plain/bread flour Water: 390 ml cold water (start here; you can adjust ±10 ml next time) Psyllium: 1 level tbsp (≈10 g) Notes: Handles water well, good structure, least collapse. If the dough looks very stiff during mixing, add up to 10 ml more water. If it looks too loose/runny, reduce water by 10 ml next time. **Coles I’m Free From GF flour Flour: 500 g Coles I’m Free From GF plain flour Water: 380 ml cold water (you can adjust between 370–385 ml) Psyllium: 1 level tbsp (≈10 g) or 2 heaped tsp Notes: Slightly less thirsty than White Wings. Aim for the same “thick cake batter” look in the mixing stage. **Aldi Has No GF flour Flour: 500 g Aldi Has No GF plain flour Water: 360 ml cold water Psyllium: 2 level tsp (≈8 g) up to 1 level tbsp (≈10 g) if the dough still looks loose Notes: This blend absorbs the least water and over‑proofs the easiest. Be extra strict with the 20‑minute rise check—if it’s already very domed, stop the program and switch to Bake Only. *****The 20‑minute check (your collapse‑prevention step)***** Open the lid 20 minutes after mixing begins. If the dough is already doming high: → Stop the program → Switch to Bake Only for 50–60 minutes If the dough is level or slightly domed: → Let Rapid cycle finish normally This one step prevents 90% of GF breadmaker failures.
