High Protein Cottage Cheese Queso Dip

This cottage cheese queso dip will convert any cottage cheese haters without them even knowing it. It's a high protein sauce with cottage cheese, cheddar cheese, and taco seasonings that's a great sauce for nachos or dip for chips or veggies. But don't just limit it to a dip; use the queso as a high protein salad dressing, use it as a Mac and cheese sauce, even make some cheesy beans? Each serving is about 2 tbsp (30 g).

Combine cottage cheese, cheddar, minced garlic, chili powder, paprika, and cumin in a blender or food processor, until smooth.

Fold in a can of diced green chiles

Transfer to a microwave safe bowl, cover with a plate, and microwave for 1 1/2 minutes, stirring every 30 seconds, until warm and melty. Don't microwave too long or it will curdle
