Instructions
Step 1
Roughly chop vegetables and garlic. Add to the bottom of a heavy based oven dish
Step 2
Add chicken carcasses, herbs, salt and pepper. Drizzle over a good amount of oil and mix together so everything is coated.
Step 3
Get it into an oven at 180 for 45 mins
Step 4
When it comes out put on the hob over a medium heat, add two tablespoons of flour and combine together.
Step 5
Add water and stock cube. Let it bubble away and keep mashing everything down with a potato masher.
Step 6
After 30 mins you should have a nice dark brown thick gravy.
Step 7
Pass through a colinder making sure to squeeze out all liquid.
Step 8
Pass again through a fine sieve and your gravy is ready to serve.
