Austrian Wax Bean Sauce
A delicious Austrian recipe that can be served with potato dumplings, boiled potatoes, or bread. Easily made vegetarian or vegan by leaving out the bacon cubes and using a vegan dairy substitute!

Ingredients
3 servings
100 gramsbacon cubes
optional
1onion
chopped finely
2Garlic cloves
chopped finely
250 gramsbutton mushrooms
sliced
400 gramswax beans
chopped into small pieces
125mlwhite wine
500mlvegetable stock
salt
to taste
pepper
to taste
1 tablespoondried summer savory
1 tablespooncornstarch
125mlcream
or milk or vegan substitute
Instructions
Step 1
In a deep hot frying pan, add bacon cubes and fry for a minute or two.
Step 2
Add in the chopped onion and garlic and cook until translucent.
Step 3
Add the mushrooms and sauté them until lightly browned.
Step 4
Add the cut wax beans and pour over the white wine, followed by the vegetable broth.
Step 5
Add the spices and herbs and simmer until the beans are tender.
Step 6
Whisk the cornstarch into the cream. Add a small amount of the warm sauce from the frying pan into the cornstarch mixture and thoroughly whisk. Then slowly add the cornstarch mixture back into the frying pan, mixing very well inbetween, until the sauce thickens.
Step 7
Adjust seasonings to taste and serve.
