Instructions
Step 1
Line a plate or oven tray with baking paper.
Step 2
Put the minced beef and onion in a mixing bowl and season with salt and pepper.
Step 3
Mix with clean hands until combined.
Step 4
Form into 2 burgers and transfer them to the plate or oven tray.
Step 5
Chill in the fridge for at least 30 minutes to firm them up.
Step 6
Drizzle a little olive oil in a large frying pan and place over a medium heat.
Step 7
Start the bacon medallions cooking in a griddle pan (or second frying pan), turning occasionally as needed.
Step 8
Carefully slide the burgers into the hot frying pan.
Step 9
Cook for a minute or two on each side to seal and then continue cooking until brown and cooked through. When cooked, place a cheese slice on each burger and allow to melt slightly in the heat of the pan before removing the burgers to a plate.
Step 10
Dress your rolls/buns as you like with sauces, salad etc and then add the bacon and burgers.
