Copycat Chili’s Southwestern Egg Rolls
These freeze beautifully before cooking, too. Roll them, freeze them on a baking sheet until firm, then transfer them to a freezer bag. You can cook them straight from frozen by adding about 3 to 5 minutes to the air fryer or oven time. They’re perfect for meal prep and make a quick, satisfying lunch or dinner.

Ingredients
6 servings
2 cupschicken
cooked shredded, rotisserie or homemade
1 cupfrozen corn
thawed
1 x 15 ozcan black beans
rinsed and drained
1 cupspinach
chopped
1red bell pepper
diced
2green onions
sliced
1 cupshredded Pepper Jack cheese
or dairy free shredded cheese if needed
1 tspminced garlic
1 tspground cumin
1 tspchili powder
½ tspsmoked paprika
½ tsponion powder
¼ tspcayenne
optional
salt
pepper
to taste
0.5lime
Juice of
12egg roll wrappers
large
oil spray
Instructions
Step 1
1. Cook the bell pepper in a skillet for about 4 minutes until softened.
Step 2
2. Add the garlic and spinach and cook until the spinach wilts.
Step 3
3. Remove from the heat and mix in

4. Let the filling cool for about 10 minutes.
Step 5
5. Place about ⅓ cup filling on each wrapper.
Step 6
6. Fold in the sides and roll tightly, sealing the edge with water.
Step 7
7. Spray lightly with avocado oil.
Step 8
Air Fry
* 380°F for 10 to 12 minutes
* Flip halfway through.
Step 9
Bake
* 425°F for 18 to 20 minutes
* Flip once halfway through.
