Cooked Rice (Serves 4)
Simple stovetop method for fluffy white rice: rinse, boil, cover and simmer, then rest and fluff. Includes tips to fix firm or wet rice before serving.

Instructions
Step 1
Measure rice into a bowl.
Step 2
Wash the rice 3-4 times until the water is almost clear. Gently rub the grains while washing.
Step 3
Drain well completely.
Step 4
Add the washed rice to a saucepan with water. Add salt if using.
Step 5
Place the pan over high heat and bring the water to a boil.
Step 6
Once boiling, stir once, reduce the heat to the lowest setting, and cover tightly with a lid.
Step 7
Cook for 15 minutes without lifting the lid.
Step 8
Turn off the heat and let the rice rest, covered, for 10 minutes. This finishes the cooking gently.
Step 9
Open the lid and fluff the rice gently with a fork or rice paddle. Do not mash the grains.
Step 10
Serve hot.
