Step 1

Prepare the Lemongrass: Cut off the leafy tops and the very bottom of the stalks. Peel away the tough outer layers. Use the back of a knife or a heavy object to bruise (smash) the white part of the stalks to release the essential oils.
Step 2

Boil In a small pot, bring the water to a boil. Add the smashed lemongrass stalks.
Step 3

Infuse: Lower the heat and let it simmer for about 5-8 minutes until the water turns a pale yellow and smells fragrant.
Tip: If you are using tea bags, turn off the heat and add them now. Let them steep for 3 minutes, then remove.
Step 4

Sweeten: Stir in your honey or palm sugar while the liquid is still warm so it dissolves completely.
Step 5

Cool & Balance: Let the tea cool to room temperature. Stir in the lime juice to brighten the flavor.
Step 6

Serve: Fill two tall glasses with plenty of ice. Pour the lemongrass tea over the ice.
