Step 1
Preheat the oven to 200ο C (390ο F) set to fan.

Step 2
Cut the potatoes into small pieces and add them to a pot with boiling water. Add salt and boil them for 15 minutes. Drain and let them cool until their whole moisture is evaporated.
Step 3
Transfer the potatoes to a bowl, add 100 g butter, salt, pepper, and press them with a potato masher until the ingredients are homogenized.
Step 4
Add the egg yolks, 80 g parmesan cheese, and mix. Transfer to a pastry bag and set it aside.
Step 5
Place a frying pan over high heat to heat it up well and add the olive oil.
Step 6
Add the ground meat to the pan, into pieces, salt, pepper and sauté it for 3-4 minutes until golden brown and caramelized. Transfer to a bowl and set aside.
Step 7
Place the frying pan back on the heat.
Step 8
Cut the celery and the carrot into thin half-moons, the onion and the garlic into small pieces, and add them to the pan. If the pan is too dry, you can add 1 tablespoon of olive oil.
Step 9
Add the rosemary finely chopped, salt, pepper, and sauté for 1-2 minutes until caramelized.
Step 10
Add the tomato paste and sauté. Add 20 g butter, the flour, and mix.
Step 11
Add the ground meat, the chicken bouillon cube, the water, and simmer over medium heat for 10 minutes until the moisture is evaporated. Remove from the heat, add the peas, and mix.
Step 12
Spread the whole meat filling into a 20x30 cm ovenproof baking dish and spread the mashed potatoes over it.
Step 13
Sprinkle with the remaining parmesan and bake the pie for 15-20 minutes until the ingredients are combined and the mash is golden.

Let the pie cool and serve with rocket
