Step 1
Preheat the oven to 350°F. Line two baking sheets with parchment paper.
Step 2
In a medium bowl, combine the oat flour, baking soda, and salt. Set aside.

In a microwave-safe bowl, melt the coconut oil in a microwave, then pour it into a large mixing bowl.
Step 4
To this large bowl, add the sugar, egg, and vanilla. Mix until well combined.
Step 5
Add the dry ingredients to the wet ingredients and mix well.
Step 6
Fold in the chocolate chips until just combined.
Step 7
Put tablespoon-size scoops of batter on the baking sheets, leaving about 2 inches between each cookie. Bake for about 11 minutes, or until golden brown.
Step 8
As soon as the cookies come out of the oven, sprinkle them with a little salt. Let the cookies cool on the pan for about 2 minutes, then transfer them to a wire rack to cool completely.
