For the Dough
Peach Cobbler Filling
½ cuplight brown sugar
4Peaches
Ripe, Pitted & Diced
1 Tbspcinnamon
¼ tspNutmeg
¼ tspsalt
0.5 stickbutter
2 tspVanilla Extract
Cinnamon Roll Filling
Cream Cheese Buttercream Frosting
For the Dish
Instructions
Step 1
Prepare Sourdough (see recipe separately)
Step 2
In a medium saucepan, combine Peach Cobbler ingredients. Cook on medium heat, stirring occasionally, until peaches are tender and sugar is fully melted. Set aside and let cool.
Step 3
In a microwave safe bowl, combine Cinnamon Filling Ingredients. Microwave for 30 seconds and stir to make a thick paste.
Step 4
In your mixer with whisk attachment, whip together frosting ingredients until light and fluffy. Set aside.
Step 5
Butter or spray two 9x13 casseroles.
Step 6
On a clean, lightly floured surface, turn out dough and stretch into a large rectangle. (Approx 12 x 12 inches)
Step 7
With a spoon or spatula, spread Cinnamon Filling across dough all the way to the edges. (tip: use a teaspoon to dollop small bits across the dough and then spread)
Step 8
Add 2 big spoons of cooled Peach cobbler and spread across dough.
Step 9
Using a knife or bench scraper, cut 12 strips 1 inch wide. *messy part* Carefully roll each strip into a spiral and place 6 in each 9x13 dish, leaving space between rolls to rise.
Step 10
Spoon Peach Cobbler over top of each roll.
Step 11
Cover and let rise until doubled in size. (approx. 1-2 hours)
Step 12
Bake in a preheated 350° oven for 35-40 minutes (varies by oven and elevation) until a toothpick inserted in the middle of a roll on the center of the dish comes out clean.
Step 13
Set on counter to cool a little (15-20 mins) and while still warm (but not hot), spread cream cheese frosting on rolls. You want it to melt into them a little but not entirely.
Step 14
Serve warm, refrigerate leftovers. To reheat rolls, microwave covered for 30 seconds.
