Bacon Potato Salad

This is a Go-To recipe for every outdoor cookout, BBQ and potluck! I modified from the original found on allrecipies to my liking.

Instructions

PREP!

Step 1
Cook your BACON. You can cook it any way you want as long as it is done and crispy I prefer baking mine. When cool, chop or crumble and set aside. This will take time, so I suggest getting it done first.
Step 2
Chop CELERY and ONION. I like tiny bits, like less than 1/4 inch square, so they can really get into each bite. But if you like larger bits, go for it. It's what you like!
Step 3
Boil Eggs, peel, and chop. I like them tiny, but you can make it the size you like.

The POTATOES ... This is the crucial element.

Step 4
Peel and dice potatoes to 1/2 inch cubes (using a vegetable dicer makes this faster)
Step 5
Prepare an ice bath in a large bowl. I mean, fill the bowl with ice and add cold water until the bowl is 3/4 of the way full. You need it ready to put the potatoes in to immediately stop the cooking process.
Step 6
add to 6 qt pot and cover with water. season generously salt
Step 7
heat on high until water comes to a boil, then reduce heat to med-high and cook for 5 minutes. Test a cube. You want them to be slightly firm. If too firm, leave on 1 additional minute, but no more!
Step 8
remove from heat and strain off hot water, then pop them into the ice bath and gently stir them around in it. Just let those spuds chill.

MIX IT!

Step 9
Add your cooked POTATOES, ONION, CELERY, BACON, EGGS, MAYO, MUSTARD, and PEPPER to a large mixing bowl.
Step 10
Gently Fold ingredients together with a big spoon. Start at the outside edge across from you, scrape down to center, lift spoon up and turn over. Rotate bowl and continue folding out to in until all the way around a few times and it looks mixed.
Step 11
TASTE IT and SALT to taste. The Bacon is salty, so I don't salt until I taste it mixed up first.
Step 12
Repeat step 10 to incorporate the salt. Continue until it tastes right.
Step 13
Spoon into airtight storage containers and store in refrigerator. If you mixed it in a bowl that has a lid, then just put the lid on it! :)
Step 14
Best if chilled for a few hours before served. but if you're in a hurry, you can eat it right now.

SUBSTITUTIONS

You can add more or less of anything in this recipe if you want. You can use pre-cooked bacon to save time. I've never used canned diced potatoes, but I think they would work, it would just be a different flavor and I suggest rinsing them before using.
