Ingredients
4 servings
1zucchini
cut into 1/2 - inch dice
1onion
large, chopped
2red bell peppers
large, or yellow, chopped
2carrots
peeled and coarsely chopped
1eggplant
Italian, cut into 1/2-inch dice
½ cupextra-virgin olive oil
salt
pepper
optional
1 bunchparsley
washed and chopped
5 leavesbasil
1 sprigthyme
stemmed and minced
1 sprigoregano
stemmed and minced
3bay leaves
Instructions
Step 1
Preheat oven to 300 degrees.
Step 2
In a large bowl, toss all vegetables with olive oil. Add salt and pepper to taste.
Step 3
Toss with herbs, then spread out evenly on a large roasting pan.
Step 4
Roast for 1 hour.
Step 5
Remove bay leaves, then serve with crusty bread or Sardinian flatbread (page 65).
