Instructions
Step 1
Roast chickpeas with Harrisa, 1 tbsp olive oil, pinch of salt and Greek seasoning at 425 degrees for about 25 minutes or until chickpeas are firm and dark golden brown, stirring halfway between.
Step 2
Saute onions (sliced) in 1 tbsp of olive oil and a pinch of salt until translucent. Add garlic (minced) and anchovy paste. Cook at least 20 minutes stirring frequently and occasionally deglazing with pasta water as needed.
Step 3
Add tahini, remaining pasta water, lemon concentrate, black pepper, half the parmesean cheese and incorporate. Taste and adjust seasoning as needed.
Step 4
Add capers, olives (chopped) pasta and combine.
Step 5
Top with cilantro (or parsley), roasted chickpeas and remaining parmesan and serve.
