optional, for extra heat
1 Tbspdried mexican oregano
1 Tbspground cumin
1 Tbspsalt
1 Tbspblack pepper
1 tspground cloves
½ cupapple cider vinegar
Slow Cooker Prep
Instructions
Consume (Chili Adobo)
Step 1
In a dry skillet over medium heat, toast the dried chilis for 1–2 minutes until fragrant (don't let them burn).
Step 2
Fill a pot with about 3cups of water bring to a boil. Add Roma tomatoes cut into quarters and toasted chilis. Soak for 15-20mins until softened.
Step 3
Using a strainer and a bowl, separate the soaked peppers and soaking liquid. YOU NEED 1 Cup of the soaking liquid
Step 4
Add the peppers, tomatoes to a blender and 1 cup of the soaking liquid. Also add apple cider vinegar, oregano, cumin, cloves, salt, pepper, half yellow onion, and half head of garlic to the blender.
Step 5
Blend for 4-5 mins until smooth. Should be thick like marinara sauce or tomato soup. Add more soaking liquid if needed.
Sear the Meat
Step 6
Season the roast and ribs with salt generously
Step 7
Heat up neutral oil in pan over medium high heat. Sear until brown on all sides.
Slow Cook
Step 8
Add the beef to the slow cooker pot in a single layer. (Leave the roast whole and cook longer or cut into chunks to cook for a shorter time)

add half a yellow onion and half a garlic head, cinnamon stick and bay leaves

Pour your consume/chili adobo over the meat and add beef broth. Gently stir

Cook low for 7-8 hours or high for 6-7
Finish
Step 12
Skim the red chili oil from the top of the liquid into a small bowl for later. (great for dipping or frying torillas for tacos)

Remove the bay leaves, and cinnamon stick and discard

Remove the beef and shred then return to the consume
Serving Recommendations
Step 15

Quesabirria Tacos - Dip corn tortillas into the red chili oil skimmed from the top of your consomé. Fry them in a hot skillet, load with shredded cheese (like Oaxaca, Mozzarella, or Monterey Jack) and your shredded beef, then fold and crisp up.

Birria Bowls - Serve the shredded beef over a bed of fluffy white or Mexican rice, ladle generous spoonfuls of warm consomé over the top, and finish with fresh toppings (like a fried egg)

Mulitas or Tortas - Sandwich the beef and melted cheese between two crisp-fried tortillas (mulita) or load it onto a toasted bolillo roll (torta) brushed with the chili oil.
