Instructions
Step 1
Remove seeds and veins from chiles, roughly chop and simmer/char for 10 min.
Step 2
Mix chiles with the rest of the sauce ingredients (but bay leaves) in a blender.
Step 3
Sear the meat on each side for 90 sec. Place in the slow cooker, add sauce and bay leaves. Cook covered until the meat is falling apart. Our slow cooker took about 8 hours. I also cooked down the leftover sauce to use as the dipping sauce.
Step 4
Assemble! In a hot pan, lay the tortilla, brush with the sauce, add cheese, add meat, add more cheese, and fold, and toast on both sides.
