Demi-glazed brown gravy using drippings from a slow cooker chuck roast. Drizzle over meat, add into a Carnivore sandwich (using Carnivore bread), or over Carnivore mashed potatoes.

Instructions

Step 1
Drain chuck roast liquid into a pan on stovetop (low). Bring the liquid to a gentle simmer over medium-low heat.
Step 2
If using broth - Whisk them into the broth now for maximum flavor. -Stir periodically - do not let boil, simmer.
Step 3
Bloom Gelatin: Put gelatin in small bowl, add cold or room temp water, stir well (with fork). Let it sit for 5 minutes until it forms a thick, spongy gel.
Step 4
While gravy is simmering down, season chuck roast with "smoked sea salt"
Step 5
Take simmered down liquid off burner, add "thickened/bloomed" Beef Gelatin, stir in with wooden spoon or spatula. Add sprinkle of Smoked Salt.
Step 6
Move back on low heat and let simmer down. Let cool before adding cream/butter.
Step 7
Once cooled down (and off heat), add cream and butter, (and egg yoke if using). Whisk while adding, keep whisking while it thickens/simmers. will thickens as it sits.
Step 8
Season with salt to taste if needed.
