Portuguese Pork and Crispy Potato Cubes (Carne de Porco à Portuguesa)

A traditional Portuguese comfort food. Tender pork cubes marinated in garlic, bay leaf, and paprika, tossed together with crispy fried potato cubes so they soak up all the delicious pan juices. No clams needed!

Instructions

Step 1
1. MARINATE THE PORK (15 mins before): In a bowl, mix the 450g of pork cubes with the sliced garlic, the bay leaf, 1 tablespoon of paprika, 50ml of white wine, a pinch of coarse salt, and black pepper. Stir well and leave it on the counter to absorb the flavours.

2. PREP THE POTATOES: Peel the potatoes and cut them into cubes (try to make them the same size as the meat). Pat them dry with kitchen paper so they fry beautifully.

3. FRY THE POTATOES: Heat the vegetable oil in your pot with the basket. Once the oil is very hot, lower the potato cubes into the oil. Fry until they are golden and crispy. Lift the basket, drain the oil for 10 seconds, and set them aside.

4. SEAR THE PORK (High Heat): Place a large frying pan on high heat (number 6) with a teaspoon of Lurpak butter or olive oil. Add ONLY the pork cubes to the pan (leave the liquid in the bowl for later). Fry for 5 to 6 minutes, stirring occasionally, until the meat is browned on all sides.

5. MAKE THE SAUCE (Medium Heat): Lower the frying pan heat to medium (number 4). Add the chopped onion to the pork and cook for 2 minutes until soft. Pour in the leftover marinating liquid from the bowl. Let it bubble gently for 2 to 3 minutes to create a rich garlic sauce.

6. COMBINE AND SERVE: Turn off the heat. Toss the crispy fried potato cubes directly into the frying pan with the pork and sauce. Mix gently so the potatoes absorb the delicious juices without losing their crunch. Serve immediately with a fresh squeeze of lemon juice on top!
