Ingredients
4 servings
4boneless skinless chicken breasts
pounded to 1/4" thick
1 ¼ cupsbalsamic vinaigrette
4 tablespoonsbrown sugar substitute
Vegetable Cooking Spray
butter flavored
1 ½ tablespoonsextra virgin olive oil
2 cupsfat free beef broth
1 ½ cupswhite mushrooms
sliced
½ teaspoonsalt
pepper
½ teaspoonsalt
pepper
2 tablespoonsfresh parsley
chopped
2scallions
chopped, optional
Instructions
Step 1
Combine 1 cup of the balsamic vinaigrette and 2 tablespoons of Swerve in a plastic bag. Close and shake to combine well. Add in chicken breasts and marinate in the refrigerator for 30 minutes.
Step 2
Preheat oven to 350 degrees.
Step 3
Spray a large skillet with butter flavored cooking spray and place over medium high heat. When pan is hot, add oil. Remove chicken breasts from bag and saute on each side for about 5 minutes. When chicken is browned on both sides, remove from pan and place in an oven safe dish and bake for 15 minutes.
Step 4
While chicken is baking, add mushrooms to the saute pan and season with salt and pepper. Cook and stir for about 2 minutes. Add in the remaining balsamic vinaigrette, 2 tablespoons of Swerve brown sugar substitute and beef broth. Bring to a boil. Reduce heat and simmer for 25 minutes or until the sauce is reduced by half.
Step 5
Remove chicken from the oven and pour the sauce over the chicken breasts. Top with chopped fresh parsley and chopped scallions if using.
