Slow Cooker Oats

Similar to my Slow Cooker Dried Beans recipe, I'm using a simple soak and slow cook method for an easy carb side. This up is rolled oats, which can make a delicious side or base to any meal, sweet or savory. Don't just think of oatmeal as a sweet breakfast. Sure, oats are great when mixed with Greek yogurt and nuts. But this tasty and nutritious grain can go so much further. Try replacing the brown rice or quinoa in any of your slop bowls with cooked oats, or use oats in Congee in place of brown rice. You can even make great risottos using oats, just see my Butternut Squash RisOATto. Brown rice, quinoa, rolled oats, barley, bulgur, etc. are all nutritious whole grains. Mix and match with whatever you got!

Add oats to a medium bowl with water and salt. Cover and refrigerate for 4 hours.

Step 2
Transfer the oats and all soaking liquid to a large slow cooker. Cover and cook on low for 2 hours, or until creamy and most of the water has been absorbed.
