Instructions

Step 1
Start heating up your pan over medium high heat as you chop your veggies. Dice tomatoes and onions.
Step 2
Add them to the pan and stir often, for around 5 minutes until the onions are translucent. Add seasonings and spinach. Mix together and let it cook for 2 more minutes.
Step 3
Toast your ciabatta (I put it in the toaster). Any bread will do, but that’s my favorite
Step 4
Add the egg to the pan with some mozzarella and scramble. I let it cook for around 3 minutes so it’s still a bit runny - but cook to your liking
Step 5
Once the bread is ready, spread pesto rosso and zhoug. Add eggs on top and enjoy
