Tropical Fruit Salad Platter

A colorful tropical fruit platter arranged on a serving dish and served with a tangy papaya seed dressing blended with mustard, vinegar, and oil. Great for lunch or as a side.

Ingredients
4 servings
1papaya
sliced, reserve seeds for dressing
2kiwi fruit
sliced in rounds
1 ½ cupsfresh cherries
2oranges
unpeeled, sliced in rounds and quartered
2bananas
sliced diagonally
1 ½ cupsfresh strawberries
Papaya Seed Dressing
¾ cupsugar
½ tspsalt
1 tspdry mustard
1egg
¾ cupwhite wine vinegar
1 ½ cupssalad oil
1 Tbspgreen onion
chopped
3 Tbsppapaya seeds
Instructions
Step 1
Arrange the papaya, kiwi fruit, cherries, oranges, bananas and strawberries around the edges of the serving platter.
Step 2
Prepare dressing. Pour into small serving bowl and place in center of platter.
Step 3
Serve fruit with dressing spooned over individual portions.
Step 4
Papaya Seed Dressing: Place sugar, salt, mustard, egg and vinegar in blender container or the container of a food processor fitted with a steel blade.
Step 5
Turn blender or processor on, and very slowly add the oil, blending until a thick dressing forms.
Step 6
Add the onion and papaya seeds. Mix to blend—do not process to purée, as dressing is more attractive with onion and seeds still visible. Store leftover dressing in refrigerator. Makes 3 cups dressing.
