Ingredients

4 cupschicken
cooked and shredded
2 x 10.75 ouncecans cream of chicken soup
1 cuplight sour cream
1 x 10 ouncecan diced tomatoes and green chiles
undrained
1 x 15 ouncecan black beans
rinsed and drained
1 x 1 ouncereduced-sodium taco seasoning mix
envelope
5 cupstortilla chips
coarsely crushed
2 cupscheddar cheese shredded
Tomato
optional, chopped, for garnish
Green onion
optional, sliced, for garnish
Fresh cilantro leaves
optional, chopped, for garnish
Instructions
Step 1
Preheat the oven to 350 degrees F.
Step 2
Spray a casserole dish with cooking spray. Set aside.
Step 3
Combine the shredded chicken, soup, sour cream, tomatoes and green chiles, beans, and taco seasoning in a mixing bowl.
Step 4
In the sprayed casserole dish, layer the chicken mixture with tortilla chips and cheese. Cover with aluminum foil.
Step 5
Bake 30 minutes. Remove the aluminum foil and continue to bake until the cheese begins to bubble, about 10 minutes.
Step 6
Remove the casserole from the oven.
Step 7
Sprinkle the casserole with garnishes, if desired.
