Step 1
Preheat your oven to 425f

Grease a 9x12 baking dish

Rinse your quinoa until the water runs clear

To your baking dish, add rinsed quinoa, broth, lime juice, fajita seasoning, rotisserie chicken and frozen peppers and onions

Stir until well combined but make sure the quinoa stays submerged by the liquid

Top evenly with shredded cheese

Cover with foil and bake for 30 minutes

Uncover and bake for an additional 15 minutes
