Honey-Mustard Salmon with Mashed Potatoes

Instructions

Step 1
Preheat the oven to 150°C. Mix the soy sauce, honey, and Dijon mustard together in a bowl. Add the salmon fillets and coat them in the marinade. Place the salmon on a baking tray lined with parchment paper and bake for 15–17 minutes. The salmon is ready when it is pale pink inside and flakes easily when pressed gently.
Step 2
Peel the potatoes and cut them into evenly sized pieces. Boil for about 20 minutes or until soft. Drain and return the potatoes to the pot. Heat the cooking cream separately, but do not let it boil. Mash the potatoes with a potato masher or fork, then gradually mix in the warm cream.
Step 3
If desired, add 2 tbsp butter to the mash. Continue mixing and mashing until you reach your preferred consistency. Taste and season with salt if necessary.
Step 4
Serve the salmon with the mashed potatoes. Enjoy!
