Ingredients

1Pork Roast
boneless pork shoulder or pork butt
1 x 12 ozBaby Carrots
bag, Pre-washed, no chopping
Potatoes
Petite, gold, or red baby potatoes, Leave whole, no peeling
3 cupsBroth
Certified Gluten-Free beef or chicken broth, Swanson or Pacific Foods
2 TbspTamari
Gluten-Free, Or coconut aminos, San-J makes a great certified GF tamari
½ tspsalt
½ tsppepper
1 tspitalian seasoning
1 Tbsponion powder
1 Tbspgarlic powder
3 Tbspcornstarch
mixed thoroughly into 3 tbsp cold water
Instructions
Step 1
The Base: Place a slow cooker liner in your crockpot. Pour the entire bag of baby carrots and baby potatoes directly into the bottom of the pot.
Step 2
The Meat: Place your 3 lbs pork roast directly on top of the vegetables.
Step 3
The Pour: Pour the 3 cups of gluten-free broth and 2 tablespoons of tamari over the meat. Evenly sprinkle the garlic powder, onion powder, Italian seasoning, salt, and pepper over everything.
Step 4
The Cook: Cover with the lid. Cook on LOW for 7 to 8 hours (or HIGH for 4 hours) until the pork is so tender it falls apart when pressed with a fork.
Step 5
The Lazy Gravy Hack: Remove the lid and switch the crockpot setting to HIGH. Stir your cornstarch and water mixture directly into the bubbling juices surrounding the meat and vegetables. Let it cook uncovered for 10–15 minutes until it thickens into a rich, savory gravy.
Step 6
Serve: Shred the pork using two forks right in the pot, coating the meat, carrots, and potatoes in the warm dairy-free gravy.
