Instructions

Step 1
​Sweet potato puree: Peel the sweet potatoes, cut them into cubes, and boil them in salted water until tender (about 12 minutes). Drain, then mash them smoothly with the butter, a pinch of nutmeg, and a little salt.
Step 2
​Pork tenderloin: Season the whole pork tenderloin with salt, pepper, and chopped rosemary.
Step 3
​Sear: Heat the olive oil in a pan and sear the tenderloin on all sides until golden brown (about 3–4 minutes).
Step 4
​Bake: Transfer the pan (or place the meat on a baking sheet) into an oven preheated to 180°C and bake for about 5 minutes to keep it juicy and tender inside.
Step 5
​Serve: Slice the pork tenderloin into medallions and serve warm alongside the sweet potato puree.
