Ingredients

1 x 6 ounceFrozen orange juice concentrate
can, thawed
2 ½ cupswater
boiling
1 x 8 ouncecan Crushed pineapple
undrained
1 x 6 ounceFrozen orange juice concentrate
can, thawed
2 x 11 ouncecans Mandarin oranges
thoroughly drained, Reserve some segments for decoration
1 x 3.4 ounceInstant vanilla pudding mix
package, or lemon
1 cupmilk

8 ozFrozen whipped topping

Instructions
Step 1
Dissolve the gelatin: In a large bowl, completely dissolve the orange gelatin powder in 2.5 cups of boiling water.
Step 2
Add the citrus & pineapple: Stir the thawed orange juice concentrate and the undrained crushed pineapple directly into the warm gelatin mixture.
Step 3
Partial chill: Place the bowl in the refrigerator for about 30 to 45 minutes until it is partially set (slightly thickened but not completely firm).
Step 4
Fold in oranges: Gently fold the drained mandarin oranges into the partially set gelatin. Pour the mixture into a 13x9-inch baking dish and refrigerate until completely firm.
Step 5
5. Make the topping: In a separate bowl, whisk together the instant vanilla pudding mix and cold milk until smooth. Gently fold in the thawed whipped topping.
Step 6
Layer and chill: Spread the creamy pudding layer evenly over the firm orange gelatin layer. Chill for at least another hour before slicing and serving.
Step 7
Decorate with reserved mandarin orange segments and mint leaves.
