Instructions

Step 1
Batch Metrics & Usage Total Volume: Exactly 3 cups (48 tablespoons / 24 fl oz) Total Weight: 337.0 g (11.89 oz) Serving Size per 1 lb of Protein or Vegetables: 1 to 1.5 tablespoons (approx. 7.0 g to 10.5 g) Total Servings per Batch: At 1 tbsp per pound: 48 servings (seasons 48 lbs) At 1.5 tbsp per pound: 32 servings (seasons 32 lbs) Kitchen Applications Braised Greens (Collards, Turnips, Mustard): Add 1.5 tablespoons per pot along with smoked paprika or smoked unsalted turkey to build rich pot liquor without salt. Poultry & Pork: Rub generously directly onto chicken thighs, whole roast chicken, or chops 30 minutes before roasting, smoking, or pan-searing. Beans & Legumes: Stir 1 to 2 tablespoons into black-eyed peas, red beans, or pinto beans during the final 45 minutes of simmering. Mixing & Storage Checklist Fine-Rub the Herbs: Rub the dried sage and thyme between palms or pulse in a dry spice grinder so there are no large leaves that settle to the top of the jar. Whisk: Combine all 11 ingredients in a large bowl and whisk for 60 to 90 seconds until the yellow turmeric and red paprika blend into an even, uniform golden-russet tone. Jar & Seal: Store in a 1-quart (32 oz) glass mason jar with an airtight lid in a dark pantry away from the stove for up to 6 months. Shake before each use.
