Instructions
Step 1
Preheat oven fully to 325°F conventional. Prepare two 8 × 3-inch round pans with lightly greased parchment circles on the bottoms and smooth side strips.
Step 2
Whisk flour, cocoa, buttermilk powder, baking powder, baking soda, salt, and espresso powder thoroughly so leaveners are evenly dispersed.
Step 3
Whisk sugar with the whole egg(s) and additional yolk until uniform and slightly thickened, about 60 seconds; do not whip into a large foam.
Step 4
Whisk in oil, vanilla, and room-temperature water until emulsified.
Step 5
Fold in dry ingredients until nearly incorporated. Slowly stir in hot water just until smooth; batter should be thin and pourable.
Step 6
Divide batter equally, approximately 573 g per pan. Do not assume this guarantees 2-inch baked layers; actual height depends on rise. Gently tap pans to release trapped bubbles.
Step 7
Bake at a steady 325°F. Begin checking at 35 minutes; allow approximately 40–55 minutes depending on oven and batter depth. Do not open the oven early while the centers are fluid.
Step 8
Check center spring-back, a tester without wet batter, and center temperature around 200–205°F as a supporting cue. A fully set center matters more than a flat top.
Step 9
Cool in pans 10–15 minutes (about 10 minutes for springforms), then carefully release and cool completely on racks. Level domes only after fully cool.
Step 10
Soft chocolate ganache (filling and poured top): Warm cream until steaming; pour over finely chopped chocolate. Rest 2–3 minutes, then stir gently from center outward. Stir in butter and salt. Reserve a portion to cool until pipeable/spreadable for the center; keep the remainder fluid for pouring over the cake.
Step 11
French vanilla whipped cream (served alongside): Whip cream until lightly thickened. Sprinkle in instant pudding powder, add vanilla and salt, and whip to soft-medium peaks. Chill 10 minutes to hydrate. Use instant pudding (not cook-and-serve); avoid overwhipping.
