Instructions

Step 1
Preheat oven to 180*c/350*f/Gas Mark 4/160*c Fan Oven.
Step 2
Line a cupcake tin with cases and set aside.
Step 3
Place the margarine, sugar, egg, milk, self-raising flour and vanilla extract into a bowl and using an electric mixer beat together until well combined and spoon the mixture into your prepared tin.
Step 4
Cook for 16 to 20 minutes, until golden brown and light and fluffy. You can tell the cakes are ready when they spring back when lightly pressed. You could also insert a skewer into the middle of one of the cakes and if it comes out clean, then the cakes are ready.
Step 5
Once ready, remove from the oven.
Step 6
Allow the cakes to sit in the tin for roughly 5 minutes, then place on a wired rack to cool.
Step 7
Whilst waiting for the cakes to cool, start to make the Earl Grey buttercream frosting.
Step 8
Lightly warm 2 tablespoons of milk and add the 2 Earl Grey teabags. Leave this to sit for roughly 3 minutes. Pour the remaining 2 tablespoons of milk on top of the tea mixture and leave for 5 minutes. Squeeze the teabags out into the milk for an Earl Grey infused milk.
Step 9
Add the butter to a mixing bowl and using an electric mixer, blend until creamy.
Step 10
Add half of the sieved icing sugar to the bowl and using a spoon, gently stir together until just combined (this helps to prevent an icing sugar explosion!), before mixing with the electric mixer.
Step 11
Add the remaining icing sugar and salt and follow the steps above.
Step 12
Lastly, add the Earl Grey milk, mixing until completely and thoroughly mixed.
Step 13
Do not be afraid to overmix, you want this to be nice and smooth.
Step 14
Once your cupcakes are fully cool, you are free to decorate them how you wish. This icing is thick enough to pipe if desired or can be placed on top of the cake in your chosen design.
Step 15
If using, place 1 macron on top of each cupcake for decoration.
