Instructions

Step 1
In a large, deep skillet, add chicken broth, uncooked rice, 1/4 tsp salt and minced garlic to the skillet, mix and bring to a boil.
Step 2
Reduce the heat to low, cover and let simmer for 15-20 minutes.
Step 3
Remove from heat and mix in lime juice, black beans, and cilantro.
