Slowcooker Creamy Chicken, Bacon & Leek Casserole 🥘 517 cals with a 200g serving of mash (£1.57 a serving)
Say hello to your new favourite casserole perfect for all of autumn and winter. It’s cheap as chips and takes no effort to make. Chicken, bacon & leek in a creamy white wine sauce get in 😍
Ingredients
- 400g chicken thigh 🍗 thigh meat is much cheaper
- 1 packet of cooked bacon 🥓
- 3 small leeks
- 100ml of white wine
- 300ml of chicken stock
- 2 tbsp cornflour mixed with 2 tbsp water
- 1 tbsp of mustard
- Fresh rosemary 🍃
- Fresh oregano 🌿
- 1 tsp dried parsley
- Salt and pepper
- 3 garlic cloves or garlic purée
- 1 tbsp of creme fraiche (Add at end) If not counting cals use double cream
Method
1. Add all ingredients to the Slowcooker but cook the bacon before adding to the Slowcooker
2. Cook on high for 4 hours or low for 7-8
3. If you need the sauce thicker add more cornflour
4. Serve with mash and enjoy
This will stretch to 5 servings because there’s two types of protein, then your veg and mash. Or for those who are extra hungry make 4 large servings
