Instructions

Step 1
Prepare the sponge dough. Put the amount of flour, instant dry yeast, and lukewarm water in a clean bowl and mix well. Cover the top and wait for 30 minutes.

2. After 30 minutes, add the remaining ingredients in the sponge dough bowl. When the dough has been lumped together, transfer it to the workbench and start kneading the dough. Use the heels of your hands to push down and outward. Fold the dough in half toward you and press down. If it is getting sticky, add a little more flour. (less then 1 Tbsp) Continue to knead, folding and turning the dough, until it is smooth and supple. This can take as little as 10-15 minutes.
Step 3
Stretch a piece of dough into a thin sheet between your fingers. If the gluten is well-developed, the dough will stretch into a paper thin film without breaking.
Step 4
3. Form the dough into a large ball. Cover the top and let the dough rest for 30 minutes in a warm place.
Step 5
4. Transfer the dough to the workbench. Press the dough to remove gas and divide it into 6 pieces. Roll out the dough using a rolling pin. Then roll it up from top to bottom. (Please check the video for more details.) Cover the top and wait for 20 minutes.
Step 6
5. After 20 minutes, shape the dough again in the same way as in step 4. Put the dough on a tray and let it proof until it 1,5-doubled in size in a warm place.(About 40-50 minutes)
Step 7
6. 15 minutes Before Baking - Put the towel and hot water in the oven container and put it on the bottom of the oven and preheat the oven to 250℃ (482℉). (Preheating time at least 10-15 minutes)
Step 8
Before baking, make a long cut on the surface of the dough and spray water on it. Just before baking, open the oven and spray water evenly through the oven using a sprayer also. (If you don't have a sprayer, throw some hot water on the wall of the oven.)
Step 9
Reduce the oven temperature to 200℃ (392℉) and bake for 13-15 minutes. (Take it out of the oven before it turns dark brown)
Step 10
7. Put the baked bread on a wire rack to cool completely.
