1) Pat chicken dry and season all over with salt and pepper. Heat vegetable oil in a large skillet over high heat until just smoking. Add the chicken skin-side down and sear for 4 minutes, or until chicken releases from the pan. Transfer to a Suvie pan.

2) Reduce heat to low and add the onion, stirring to coat in oil. Cook for 1-2 minutes or until softened. Add the vinegar and cook for 1-2 minutes. Pour onion mixture, broth, and olives around chicken. Insert pan into your Suvie, input settings, and cook now or schedule. Suvie Cook Settings Bottom Zone: Slow Cook Low for 2 hours
