Roasted Potatoes and Green Beans with Mustard Drizzle

Ingredients
4 servings
0.5 lbsfingerling potatoes
3garlic cloves
3 Tbsparsley
chopped
2 Tbsolive oil
½ cupcanned chickpeas
drained, rinsed, dried
0.5 lbsgreen beans
washed trimmed, dried
1 Tbsdijon mustard
1 ½ Tbsolive oil
1 Tbswhite wine vinegar
2 tsphoney
Instructions
Step 1
Heat oven to 425 F
Step 2
In a mixing bowl, toss potatoes with garlic, herbs, and half of the olive oil
Step 3
Roast for 25 mins, stir once
Step 4
When potatoes are tender and starting to brown, add chickpeas and green beans and roast for another 10 mins
Step 5
Whisk mustard, oilive oil, vinegar, and honey to form an emulsified dressing. Season to taste
