Ingredients

1 tspCanola olive oil
or extra virgin
150gboneless skinless chicken breast
1 tspspicy seasoning
½ tspcurry powder
3 TbspLower fat creamy peanut butter
2 Tbsplight soy sauce
1 Tbspwater
pizza crust
12"
3green onions
6mushrooms
1 cuplow-fat mozzerella cheese
grated
Instructions
Step 1
Heat oil in a small nonstick fry pan or wok at med-high heat. Cut chicken into small bite size pieces and add to pan as you cut. Toss until chicken is no longer pink. Sprinkle with spice and set aside.
Step 2
Soften peanut butter in a coffee mug in the microwave for 15-25 seconds. Stir in soy sauce and water. Keep blending with a fork or whisk until slightly runny. Spread sauce over pizza crust. Top with sautéed chicken.
Step 3
Wash and finely chop green onions. Wash and slice mushrooms. Scattered both over pizza. Top with mozzarella cheese.
Step 4
Bake in a pre-heated oven of 350°F for 5 minutes. Change to broil and watch for cheese to bubble.
