Bangkok Katsu (Thai Peanut Sauce with Noodles & Chicken Katsu)

I had this in a restaurant and had to remake it at home. It’s my go to at my favourite Thai place and it’s even better made at home! Rice noodles coated in peanut sauce with a crispy chicken Katsu on top. Delicious!

Instructions

Step 1
In a shallow bowl, whisk together egg, flour, water, black pepper, and salt.

In another shallow bowl, whisk together panko breadcrumbs, granulated garlic, and granulated onion.
Step 3
Coat the chicken breast in the batter, shaking off the excess.
Step 4
Now coat the chicken in the seasoned panko breadcrumbs.
Step 5
In a preheated skillet on medium heat, shallow fry the chicken breasts in until golden on the outside and cooked through on the inside. About 2 minutes on each side.
Step 6
For the peanut sauce noodles, cook the rice noodles according to its package instructions. Next, in a large mixing bowl, whisk together the peanut butter, soy sauce, rice vinegar, chili garlic paste, sesame oil, honey, lime juice, cayenne pepper, ginger garlic paste, water, and salt to taste. It should be a creamy smooth consistency.
Step 7
Add the cooked hot noodles to the peanut sauce and coat well. Serve with the crispy Chicken Katsu.
