Instructions
Step 1
Preheat your oven to 375°F
Step 2
In med. bowl, mix all ingredients together until well-incorporated.
Step 3
Generously grease mini muffin tin; evenly distribute mixture into 16 muffin tin cups. Squish mixture down with fingers to well-compacted.
Step 4
Top with more cheese & bake on center rack (14-16 min.) until cheese begins to brown.
Step 5
Cool (5 min.) before removing from pan.
Step 6
Serve alone or with ranch or ketchup for dipping.
Step 7
Store leftovers in fridge (up to 3 days.)

The mixture will seem a bit dry, but this is what makes them crispy & not too eggy. Add an extra egg if you want more of a quiche-consistency. They're great for breakfast this way!
Step 9
To make it easy, I just buy the microwavable frozen broccoli.
Step 10
You can add a pinch of cheese to the bottom of your greased muffin tin wells before adding your mixture.
Step 11
Feel free to season however you'd like. You could also add onion powder or black pepper. Don't forget that the Ritz crackers already have added salt.
