Bún Riêu - Vietnamese Crab Noodle Soup

Serve with a bowl of vermicelli noodles, fresh herbs, shredded water spinach stems, thinly slicked cabbage, Thai chilis and shrimp paste (optional)

Instructions

Making the broth

Step 1
* Rinse 4 lbs Pork bones with salt and cold water
Step 2
* Bring a large pot of water to a simmer, add pork bones, let simmer for 5 mins to remove impurities. After 5 mins, remove and rinse thoroughly
Step 3
* Start a new pot, add water then bring to a simmer
Step 4
* Add clean and parboiled Pork bones
Step 5
* Skim foam
Step 6
* Add Ginger and Lemongrass stalks
Step 7
* Bring heat down to low, cover with lid

Making the Tomatoes mix with Crab Paste

Step 8
* In a large pan, add 2 jars of crab paste

* Add cut Tomatoes and Green Onions

* Stir for a few minutes, add fried Tofu, stir turn off heat then set aside

Making the Riêu Cua (Crab Patties)

* Soak the dried shrimp in warm water for at least an hour or until it’s rehydrated then drain
Step 12
* Add the drained dried shrimp water to your pot instead of discarding it, it will flavor the broth
Step 13
* Peel and roughly chop the shrimps (skip if using ready crab meat)

In a food processor:

* Add the dried shrimp, run the food processor until the dried shrimp is finely minced and fluffy then add to a large mixing bowl

* Add the shrimp, process it into a paste (skip this step if using crab meat) remove then add to the same bowl

* Add the Garlic, Shallots and yellow onions. Process until finely minced
Step 18
* Add to the same mixing bowl including 1 jar of crab paste, seasoning and eggs

* Mixed well then set aside

Adding the crab mix into the broth

* Scoop the crab mix onto a large ladle or spoon
Step 21
* Using another spoon, pat the crab mix into the ladle or spoon well
Step 22
* Dip the ladle or spoon with the crab mix into the pot of broth for about a minute
Step 23
* Using a spatula, push the crab paste into the broth

* Continue until all crab paste is used

* It will be cooked once it floats up

* Add the broth seasoning to broth, stir carefully to avoid breaking the minced crab patties

* Slowly add the tomatoes mixed with crab paste and fried tofu into the pot

* Adjust broth seasoning if needed to your taste

* Turn off heat

Serve with a bowl of vermicelli noodles, fresh herbs, shredded water spinach stems, thinly slicked cabbage, Thai chilis and shrimp paste (optional)
