soaked & rinsed 24-48 hours

0.75 lbchorizo
no nitrates remove casing chopped

1onion
large organic, chopped

7garlic cloves
chopped

1 Tbspdried coriander

1 tspdried cumin

½ tspannatto

1 tspsmoked paprika

½ tsppepper

1 tspsea salt

1 Tbspdried oregano
organic

3bay leaves

3 Tbspapple cider vinegar

6 cupswater
filtered

2 cupssofrito
raw

3 Tbsphot sauce
Instructions
Step 1
In a large Dutch oven turn heat to med high, add chorizo and sear about 5 minutes, add onion stir, cook about 3 minutes, add garlic and spices, stir. Add beans, water, and the rest of the ingredients and stir. Bring to a simmer, reduce heat to med low. Cover and cook for 3-6 hours.
