Step 1
Cut the squash in half, lengthwise and scrap out the seeds. Place in a microwave-safe bowl; add ¼ cup water, cover and microwave for 16 minutes.
Step 2
Let cool slightly, then scrape into strands with a fork.
Step 3
Heat olive oil in a skillet over medium heat. Add the tomato paste, and a pinch each of cinnamon, salt and pepper; cook, stirring, 2 minutes. Add ½ cup water and bring to a simmer; Add the squash and toss. Top with fresh herbs and a sprinkle of parmesan cheese
