Looking for a complete meal in one little patty? We’ll you’ve found it. These Turkey + Wild Rice nuggets are one of my son’s favorites. I make a batch to freeze to pull out when I need a quick + easy meal. I love these because they have veggies, carbs and protein all in one. They’re so delicious.

Instructions
Step 1
Turn your instant pot onto sauté mode, and add in olive oil. Once the instant pot is heated add in the diced onion, carrot and celery along with salt, garlic, and thyme. Sauté for about 3 minutes.
Step 2
To the instant pot add in wild rice (brown rice works too) and 1 cup of low sodium veggie broth. Place lid on instant pot, making sure to close the steam valve, and set it to pressure cook on high for 15 minutes. Once finished allow the pressure cooker to sit for 10 additional minutes before releasing the steam valve. Let mixture cool completely before moving onto the next steps.
Step 3
Preheat your oven to 350F. In a bowl combine the cooled off rice mixture with ground turkey, egg, and flour. Mix until completely combined. Spoon about 2 tbsp of the mixture at a time onto a lined baking sheet and form into patties.
Step 4
Bake for 12-15 minutes until the patties reach 165F internally. Let cool then serve!
