Instructions
Step 1
1. Line the bottom of a 9 inch springform pan with parchment paper

2. Add the Oreo cookies into a blender or food processor and blend the cookies till they are a small crumbs

3. Add the melted butter to the cookie crumbs and pulse till combined
Step 4
4. Pour the cookie crumbs into the springform pan and pack the crumbs into the base and up the sides with the 1/2 cup measuring cup

5. Place the crust in the freezer while you make the filling

Cheesecake Filling

1. Chop or break the chocolate bars into smaller chunks

2. Melt the chocolate in the microwave or over a double boiler (my preferred method), until the chocolate is fully melted. Set aside

3. Using a hand mixer or stand mixer with the whisk attachment, whip the cold heavy cream and vanilla into stiff peaks and set aside

4. Using a hand mixer or a stand mixer fitted with a paddle attachment, beat the cream cheese until smooth and creamy. Make sure there are no lumps and scrape down the sides of the bowl as needed.

5. Sift the powdered sugar, cocoa powder, salt into the cream cheese. Then pour in melted chocolate into the cream cheese and beat on medium until smooth

6. Fold in the whipped cream until fully combined

7. Grab the crust out of the freezer and pour the chocolate cheesecake filling into the pan
Step 14
8. Using an offset spatula, smooth the filling into the crust and smooth the top
Step 15
9. Tightly cover with plastic wrap and refrigerate overnight or for at least 8 hours to allow the cheesecake to firm up.

10. Decorate with fresh fruit and/or fruit sauces (I recommend a raspberry coulis) and enjoy!
