Cabbage and Quinoa Bowl
It's so important to rinse your quinoa in a fine-mesh strainer. Quinoa has a natural coating, called saponin, which can make it taste bitter or soapy. Most quinoa is prerinsed now, but make sure to read the label and rinse your quinoa well if it isn't. I purchase my prerinsed quinoa in a large bag at Costco.

Step 1
1. Preheat an electric pressure cooker using the SAUTÉ function and adjust the heat to MORE. When the display panel reads HOT, add the ground beef, onion, garlic, salt, black pepper, and oregano. Cook, stirring occasionally, until the beef is lightly browned, about 3 minutes.

2. Add the broth, quinoa, tomato sauce, and cabbage and stir well.

3. Place the lid on the cooker and make sure the vent valve is in the SEALING position. Using the display panel, select the MANUAL/PRESSURE COOK function and HIGH PRESSURE. Use the +/- buttons until the display reads 2 minutes.
Step 4
4. When the cooker beeps, let it naturally release the pressure until the display reads LO:10. Switch the vent valve from the SEALING to the VENTING position. Use caution while the steam escapes.
Step 5
5. Serve hot.
