Instructions
Imitation Pomegranate Seeds Prep
Step 1
Cut Water Chestnuts into small cubes
Step 2
Add red food coloring, stir to completely coat
Step 3
Repeat until desired color is achieved
Step 4
Sprinkle in Tapioca Starch, stir to coat evenly
Step 5
Repeat until it has a thick coating of Tapioca Starch
Step 6
Use a strainer or colander to shake off the excess Tapioca Starch before cooking

In a separate large bowl, add ice and cold water, set aside

Bring a med size pot of water to a boil
Step 9
Slowly add the imitation pomegranate seeds, stir immediately so it doesn’t clump up

Once it floats to the surface it can be remove with a strainer then add to the ice water bowl for a few minutes

Remove the imitation pomegranate seeds once ready to add to the mixed fruits
Fruits prep

Drain the Jackfruits Syrup & discard

Cut into thin slices then add to a large bowl or container

Drain the Longan Syrup & discard
Step 15
Add Longan to the same bowl as the Jackfruits

Toddy Palm Seeds - depending on the kind you might need to thinly slice then add to the same bowl including the syrup

Add Coconut Gel, including the syrup

Add Imitation Pomegranate Seeds to the bowl of mixed fruits
Step 19
Add Half & Half to your desired creaminess (about 1-5 to 2 cups)
Step 20
Ladle the Chè Thái into a bowl or glass and enjoy with crush or shaved ice!
