Bambania Salad Sandwich

I used to have this Bambania Sandwich daily in 1986 during lunch break in the cafeteria of Beirut University Collage “BUC back then, now LAU”. A little creaminess, a little crunch and lots of flavors.
This recipe is a must for busy days when you need a quick lunch or snack for you and the kids.

Main Ingredients
4eggs
boiled, tiny square diced
¼ cupgreen bell pepper
finely diced
⅔ cupgreen onion
finely chopped, dark green parts
1 Tbspfresh parsley leaves
chopped
1 Tbspchives
finely chopped
Dressing Ingredients
Serving ingredients
Instructions
Step 1
Combine all dressing ingredients in a large bowl and mix well.
Step 2
Toss in the main ingredients, Season with salt and pepper to taste. Refrigerate for 1 hours as it tastes best cold.
Step 3
To serve, layer butter lettuce, on the bottom half of a sliced bread (burger bun or French baguette), top with the salad, and then the top half of the bread.
