Sweet Potato Mash

This recipe is unique because we roast our sweet potatoes from a cold oven to make them extra sweet for the mash! It is a perfect Easter Sunday recipe!

Instructions
Step 1
Line a baking sheet with foil and stab the sweet potatoes with a fork all over. Place on the foil and transfer to a cold oven. Turn the oven to 400*F and roast until the potatoes are very soft and fork tender. Mine took an hour and a half because they were huge. We roast instead of boil potatoes because it caramelizes the sugars and makes them much sweeter!
Step 2
Once soft, slice the potatoes open and transfer the flesh to a food processor, work in batches as needed. Add cooked garlic, salt to taste and enough butter or ghee to blend. Blend until very smooth.
Step 3
Check for seasoning and adjust accordingly.
