Step 1
Preheat oven to 425
Step 2
Trim the root off the Brussel sprouts and transfer them to large microwave safe bowl with 2 tbsp of water
Step 3
Microwave on high for 8 minutes. You want them to be easy to smash. If they do not snag easily, they need to be in the microwave longer
Step 4
Transfer Brussel sprouts to a baking sheet and smash them flat with the bottom of a cup or bowl
Step 5
In small bowl combine olive oil and minced garlic
Step 6
Coat each Brussel sprout with garlic oil, salt, pepper, and a pinch of mozzarella and Parmesan on top
Step 7
Bake for 20 minutes and serve
