Instructions

Step 1
Wash sweet potatoes. Rub with oil. Prick with fork to allow steam to escape.
Step 2
Bake for 35 to 45 minutes at 375 degrees until tender
Step 3
Scoop out inside of yams. Mash until no lumps remain. Beat in sour cream and milk. Beat in brown sugar, butter, and salt until light and fluffy.
Step 4
Increase oven to 400 degrees. Place yam mixture in a dish and bake for 20 minutes.
